It is very wet in Indonesia. Very rainy, and very humid. Reaching up to 90% humidity in some places. Naturally, part of the coffee production process requires the coffee to be dried. This can be difficult to do efficiently in that kind of environment. Enter "wet-hulling", a unique process that allows coffee to be dried at all in such a region which preserves all the typical Indonesian profiles.
